Oh how I love chicken and rice soup! It’s such a feel-good yum-yum!
Going once, going twice, going chicken soup with rice.
Chicken and Rice Soup
That’s one of my favorite lines from a little Maurice Sendak book I had and loved as a child. Perhaps that’s why chicken and rice soup is so ultra comforting to me.
Sometimes I make this with white rice and sometimes I make it with wild rice or several varieties, but as long as it has rice, I’m happy, happy, happy.
Chicken and Rice Soup
Ingredients
- ¼ cup butter
- 1 T extra virgin olive oil
- ½ onion finely chopped
- 2 cloves minced garlic
- ½ cup sliced carrots
- ½ cup chopped celery
- ¼ cup all-purpose flour
- 8 cups chicken broth
- 3 cups cooked rice I used a blend of brown & white basmati and wild & red rice
- 1 pound chicken breast cooked and cubed
- ½ teaspoon garlic salt
- ½ teaspoon ground black pepper
- 2 tsp curry powder
- 1 tsp mustard powder
- ½ teaspoon dried parsley
- ¼ tsp thyme
- 6 slices cooked crumbled bacon
- 2 cups milk
Instructions
- Melt butter in a large saucepan over medium heat along with the EVOO. Add onion, garlic, celery and carrots and saute for a few minutes. Add flour a little at a time and stir constantly to form your roux. Stir and let the roux cook for several minutes.
- Gradually add the chicken broth, stirring constantly. Bring just to a boil, then reduce heat to low so the soup just simmers.
- Add the rice, chicken, crumbled bacon, garlic salt, ground black pepper, curry powder, mustard powder, dried parsley and thyme. Allow the soup to heat through and then add the milk. Cover and let simmer for an hour or two.

Thank you for this recipe! I made it the week before last and it was SO good! I used a box of Uncle Ben’s Herb Roasted Chicken Wild Rice mix instead of regular rice, didn’t cook ahead of time, just tossed it into the pot along with the spice pack and simmered it for the hour, it was amazing! Mmm!

I make something so similar to this, of course I make it gluten free though. I have some in the freezer now that I made from broth that I made with chicken pieces in crock pot and then sat and separated the meat from the bones. I add brown rice to some bowls and make some changes to the basic soup each time so I have a variety.

Oh wow, this sounds really delicious. I would never have thought of putting crumbled bacon in chicken and rice soup, and I LOVE bacon. That probably gives it a delicious smokey, yummy flavor.
I’m not sure about the curry, everything I’ve had with that has been overpowering, but I bet you put in just the right amount.

Since I eat completely gluten-free, would a gluten free all purpose flour work just as well? Typically I use corn starch or a gluten free flour instead of all purpose regular flour, but the measurements can be different with gluten free flour. Otherwise this looks good!

I think my whole neighborhood back in MI uses this same recipe for the soup now. We did a neighborhood progressive dinner one night and that’s how I got it! (Except I’ve been using skim milk to keep it lighter.) I can’t wait to see how you do yours without chicken, especially since my daughter is vegetarian!

Freshly cooked, I think it’s close to being bread bowl thick, but maybe not quite. I used skim milk though because I like to keep it light if I can. You could probably use half and half or maybe increase the flour in the roux by a touch and thicken it that way. But with that being said, the next day leftovers were plenty thick enough to go in a bread bowl!
